Every element on this plate comes from within 50 miles of the restaurant.

Shrubs let us capture fruit at the height of its season, preserving that flavor in a bright, tart vinegar infusion. Here, local rockfish meets nectarine-tomato leaf shrub, seasonal ezme, and beautiful baby tomatoes. It may feel familiar in American cocktail culture now, but fruit-and-vinegar infusions have much older roots in Iran, especially through sekanjabin. We’re bringing that tradition out of the glass and onto the plate.

Kuh-e Holu means “Peach Mountain” in Farsi, and the cocktail is designed to resemble one: a small mountain of ice finished with a lemon verbena snowcap.

As our bar program becomes increasingly seasonal and driven by California produce, more components are being made in-house. This cocktail features two tinctures—lemon verbena and peach leaf—along with a Peach Farm nectarine cordial and a dry vermouth blend.

Coo’ Holoo leans slightly sweet, which helps bring its peach and stone-fruit flavors forward.

We always make sure there are at least a couple stuffed things on the menu, let alone guests.

Stuffing is one of the quintessential techniques of the Eastern Mediterranean. Mussels, nasturtium flowers, grape leaves, summer squash. If something beautiful comes through the kitchen, we will probably find a way to fill it. Right now, these round summer squash are getting their turn.

Jerry McGie brought in the 2021 Kefallinos Avgoustiatis from Zakynthos, made from a rare variety native to the Ionian Islands. Not one you see often, which is reason enough to get acquainted. Now pouring.

Taramasalata has joined Breaking Bread, but in true Dalida fashion, it takes a slightly different route.

Chef Sayat Ozyilmaz’s version starts with salt cured carp roe and borrows a little from the one his grandmother used to make, with potato folded in to mellow the roe. Ours gets crème fraîche, sour orange kosho, lemon zest, herbs, Aleppo chile, and hot sauce made with Javier Toscano chiles.
