We knew the moment we arrived in Cusco, Peru that we’d have to decide whether we wanted to try the local specialities of the Andes: alpaca and guinea pig. It was fairly easy to say yes to the first, as we treated it like mutton. But the latter was a much more difficult decision. I’d owned a guinea pig as a kid, and the furry little things were just so damn cute. All the locals we met kept on telling us how nutritious and delicious it is though, so finally, on our last full day in the Andes, we ordered a roasted guinea pig.

It’s buried underground in a shallow pit and pressed with stones so the poisonous internal fluids that allow it to live in such cold waters can be drained out making the meat safe to eat. After this it’s hung out to dry before being cut into strips and served. With a smell that’s described as ammonia-rich and a strong ‘fishy-flavour’, it was described by Anthony Bourdain as “the single worst, most disgusting and terrible tasting thing” he’d tried.

Octopus sushi ranges in quality here in the U.S. Sometimes it's rubbery and chewy, other times it's tender and buttery. But if you really want to have a transcendent Octopus sushi experience, you need to head to Korea, where you can try sannakji.

Sannakji is "wriggling octopus," and it's pretty much the freshest octopus you can eat. A chef takes a live young octopus, cuts it into pieces, and serves it while it's still wriggling. Some people even pop the whole live octopus into their mouth at once, but if it's your first time, maybe start slow with just a wriggling piece or two.

Oh, and don't forget to chew — about six people die each year from choking on this delicacy.

Pork Sisig

Sisig is traditionally made with pork though you can find other versions these days made with other proteins like tuna, squid, mussel, or oyster. You can even find more exotic versions made with crocodile or ostrich but pork sisig is still the best and the one you should try.
Recipes vary from place to place so it isn’t uncommon to find sisig made with things like mayonnaise, raw egg, ox brain, and chicharon bits. It’s usually consumed as a shared appetizer or bar chow dish but personally, I like to eat it as an entree with white or garlic fried rice. It’s so good.
Pampanga is considered the sisig capital of the Philippines so in my opinion, it’s still the best place to try it. The original Aling Lucing’s restaurant is still in business but you can find excellent sisig anywhere in the Philippines. If you’re visiting Manila, then I suggest trying it at the Trellis restaurant. It’s owned by a prominent Kapampangan culinary family credited for popularizing sisig in Manila.
