“To me- there is nothing better than a huge bowl filled with falafel, pickles, hummus.. ugh. It’s heaven. I’m adding a version of this onto my meal prep service this week and I wanted to share this with you!!! I love feelin’ good while also enjoying the good stuff in life. This ✨ GF BAKED FALAFEL SUNSHINE BOWL ✨ will leave your belly nice and happy 😊.
Makes ✌️: preheat oven to 400. In a food processor add 1/2 C gluten free bread crumbs (I like to take 2 pieces of gluten free bread and toast them then pulse). Next, add one 15 Oz can drained and rinsed + patted dry garbanzo beans. Next, add one handful fresh dill + parsley + cilantro + 2 tbsp ground flax + 1 diced shallot + 2 tbsp nutritional yeast + 2 tbsp lemon juice 🍋 + 1/2 tsp sea salt 🧂 + 1 1/2 tsp baking powder + 1 tsp cumin + 1 tsp paprika.
Blend everything in the food processor until most of the beans are mashed. Taste and adjust salt to liking. Form into patties, place on parchment lined sheet and bake for 10 minutes then flip and bake for another 10+ minutes until golden. Option to also sauté for a crispier falafel! 🤗
Fill up a large bowl with some quinoa + falafel + avocado 🥑 + greens (tossed in lemon + olive oil) + cucumber 🥒 + red pepper + olive oil + sprouted hummus.. and some more herbs. 😍I topped mine with herbed tahini sauce ( has a great recipe!). ❤️✨. Enjoy!” -Sarah
