Dessert

Dessert is a course that concludes a meal. The course consists of sweet foods, such as confections, and possibly a beverage such as dessert w**e and liqueur. In some parts of the world, such as much of Central Africa and West Africa, and most parts of China, there is no tradition of a dessert course to conclude a meal.

Chocolate Mousse, France

While Gallic chefs have been whipping up chocolate mousse for at least a few hundred years, the Olmec, Maya and Aztec peoples consumed chocolate long before contact with Europeans. Ancient codices depict cooks pouring chocolate from several feet in the air to create a froth.

Krispy Kreme Bread Pudding

"This recipe was created over a breakfast of —what else?—Krispy Kremes," says Armstrong. "I was planning the menu for RokBar in Hollywood and trying to come up with a fun, creative dessert." The espresso-infused whipped cream makes a brilliant, and equally decadent, topping. Beautiful Desserts

Chocolate Pasta

Pasta for dessert? Why not? It’s as simple as adding chocolate to pasta dough, as seen in a Pappardelle's Pasta recipe, and getting creative with the sauce and toppings. Take a break from the typical cakes and confections by serving long chocolate noodles dressed in berry sauce or topped with a scoop of ice cream.

Lemon Meringue Bars

Ingredients
for 9 servings

CRUST

1 ½ cups all-purpose flour(185 g)
½ cup powdered sugar(60 g)
½ teaspoon salt
¾ cup unsalted butter(165 g), 1 1/2 sticks, cubed, room temperature
LEMON FILLING

3 large eggs
1 egg yolk, reserve white for meringue
1 cup granulated sugar(200 g)
½ cup lemon juice(120 mL)
1 tablespoon lemon zest
¼ cup all-purpose flour(30 g)
MERINGUE

1 egg white
1 pinch salt
⅓ cup granulated sugar(65 g)

Preparation
Preheat oven to 325˚F (170˚C). Grease and line a 9-inch (23 cm) square baking dish with parchment paper and place on a baking sheet.
Make the crust: combine the flour, powdered sugar, salt, and butter in a medium bowl, and use your hands to mix until a crumbly dough forms.
Transfer the dough to the prepared pan, and use your hands to press it against the bottom and about 1 inch (2 cm) up the sides. Poke the bottom all over with a fork.
Bake for 20 minutes, until light golden brown.
While the crust is baking, make the lemon filling: In a large bowl, whisk together the eggs and egg yolk. Add the granulated sugar, lemon juice, zest, and a pinch of salt, and whisk to combine. Whisk in the flour until just combined.
When the crust is done baking, remove it from the oven. Pour the lemon filling over the crust and carefully return it to the oven for 25 minutes, until the filling no longer jiggles and the center is mostly set.
While the filling bakes, make the meringue: In a clean, dry medium bowl, use an electric hand mixer to beat the egg white until stiff peaks form. Add about half of the sugar, whip for 30 seconds, then add the rest of the sugar and whip until combined. Transfer the meringue to a pastry bag fitted with a large tip or zip-top bag with a corner snipped off.
Pipe 9 evenly-spaced dollops of meringue on top of the lemon bars.
Return to the oven for 10-12 minutes, until the meringues are lightly browned.
Let cool completely, then refrigerate for 1-2 hours.
Slice into 9 bars. Serve chilled or at room temperature.
Enjoy!

Fluffy Jiggly Japanese Cheesecake

Ingredients
for 6 servings

7 tablespoons butter
4 oz cream cheese(100 g)
½ cup milk(130 mL)
8 eggs, yolk
¼ cup flour(60 g)
¼ cup cornstarch(60 g)
13 large egg whites
⅔ cup granulated sugar(130 g)
hot water, for baking
powdered sugar, for serving
1 pt Strawberries(340 g), for serving

Preparation
Preheat the oven to 320°F (160°C).
In a small pot over medium heat, whisk together the butter, cream cheese, and milk until melted and smooth. Remove from the heat and let cool.
In a large bowl, whisk the egg yolks until smooth, then slowly drizzle in the cream cheese mixture, stirring until evenly combined.
Sift in the flour and the cornstarch, whisking to make sure there are no lumps.
In another large bowl, beat the egg whites with a hand mixer until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form.
Fold about ¼ of the egg whites and into the yolk mixture, then repeat with the remaining egg whites until the batter is evenly combined.
Grease the bottom of a 9 x 3-inch (23 x 7.5 cm) round cake pan, then line the bottom and sides with parchment paper. If using a springform pan, make sure to wrap the bottom and sides completely in foil twice to prevent any leakage.
Pour the batter into the pan and shake to release any large air bubbles.
Place the pan into a larger baking dish lined with 2 paper towels at the bottom. The paper towels ensure that the heat is distributed evenly along the bottom of the pan. Fill the larger pan about 1-inch (2-cm) high with hot water.
Bake for 25 minutes, then reduce the heat to 285°F (140°C), and bake for another 55 minutes, until the cake has risen to almost double its original height.
Remove from oven, and carefully invert the cake onto your dominant hand and peel off the paper. Be extremely careful, the cake will be hot. You can also invert the cake onto a plate, but this will cause the cake to deflate more.
Dust the top of the cake with powdered sugar, then slice and serve with strawberries while still warm!
Enjoy!
