Classic Roast Chicken

There’s nothing quite like a roast chicken recipe to bring the family together for dinner. It’s simple yet elegant so you can make it for company or a nice Sunday dinner. If you have time on a weeknight, the prep for oven baked chicken is quick so you’ll just need time to roast the chicken in the oven. Minimal effort and big flavors make this a favorite family meal in my house.

Roast Koji Chicken

Koji—a type of fermented rice used as seasoning in Japan—makes the meat in this roast chicken more tender, crisps up the chicken skin, and lends both sweet and savory notes.

Ingredients:

(Serves 4)

2 tablespoons granular rice koji

1 tablespoon Diamond Crystal or 2 teaspoons Morton kosher salt

1 (3 1/2–4-pound) chicken, patted dry

Freshly ground black pepper

Tenderloin

Consisting of parts of the filet mignon, chateaubriand, porterhouse steaks, and T-bone steaks, the whole tenderloin is the most tender beef roast available. Cut from under the spine, along the animal's ribcage, it is tapered in shape with the middle being referred to as the "center cut." This roast, consisting of little-worked muscle, produces mild and extremely tender flavors. The labor that goes into trimming and tying a tenderloin, as well as the waste produced, is what also makes it one of the most expensive types of beef roasts.

RARE RUMP ROAST

Ever have a hankering for leftovers? I don’t normally but I love roast beef sandwiches with a few gherkins or cornichons, a bit of mayo and a bit of mustard. I’m drooling already. The only way for me to get roast beef sandwiches is to first roast the beef.

I love roast beef that’s pink from edge to edge. I’ve never been able to achieve that by traditional roasting methods. I get very pink in the middle but the edges are more medium to well done.

Garlic-Crusted Roast Rack of Lamb

Rack of lamb is a brilliant roast centerpiece dish because it's impressive and surprisingly easy to make. This lamb recipe includes just five ingredients and 10 minutes of active cooking time. It's one of our favorite ways to prepare a rack of lamb because it's simply rubbed with plenty of garlic, rosemary, olive oil and salt before roasting. Since the seasoning is so simple, the dish pairs well with a range of sides, from risotto to green salads to roasted vegetables.

ROASTING

Roasting is a cooking method that uses dry heat where hot air covers the food, cooking it evenly on all sides with temperatures of at least 150 °C (300 °F) from an open flame, oven, or other heat source. Roasting can enhance the flavor through caramelization and Maillard browning on the surface of the food. Roasting uses indirect, diffused heat (as in an oven), and is suitable for slower cooking of meat in a larger, whole piece.[1] Meats and most root and bulb vegetables can be roasted. Any piece of meat, especially red meat, that has been cooked in this fashion is called a roast. Meats and vegetables prepared in this way are described as "roasted", e.g., roasted chicken or roasted squash.
