Cook the Book: Toni Tipton-Martin is an award-winning food and nutrition journalist and author of the new book 'Jubilee: Recipes From Two Centuries of African American Cooking' (Clarkson Potter), a beautifully-photographed recipe collection that focuses on Black food history in America.

“Toni’s work is part of a groundswell of scholarship and study on African-American foodways and how there’s been a lack of attention and marginalization,” said food historian Marcie Cohen Ferris, professor at the University of North Carolina at Chapel Hill.

Toni Tipton-Martin has spent decades amassing one of the world’s largest private collections of cookbooks published by African American authors, studying their impact on American food, families, and communities and for ways we might use that knowledge to inspire community wellness of every kind. Her first book, 'The Jemima Code: Two Centuries of African American Cookbooks' examines the history and contributions of some 150 African-American cookbook authors from the 19th Century to present day. The book went on to win a number of awards and honors, including the 2016 James Beard Foundation Award.

This week's recipe, 'Curried Meat Pies' is an adaptation of a colonial dish- British pasties- which are prevalent in many forms throughout the African diaspora (Jamaican patties, samosas, empanadas, meat pies, natchitoches).

chef derrick jones of pixar is in the house, sharing his immense knowledge of the art of barbecue and smoked meat. this week-long process of brining, spice rubbing, and slow smoking over hardwood for 12 hours, is a practice in patience. one that has been handed down to derrick by his grandpops bobby (from new orleans) and now, lucky for us, derrick is bringing this legacy of pitmaster prowess right here to san carlos

chilly temperatures could compromise the outdoor dining business that restaurants have come to rely on
thankfully, here in the bay area we're blessed with a temperate climate!
