Made one of my faves - lahanorizo (cabbage- rice) today for the first time in forever and it was delish. Lots of chopping but so worth it! Itβs basically like an easier version of stuffed grape leaves or stuffed cabbage (sarmadakia/ dolmadakia) - same flavors ππ¬π·π©πΌβπ³ I ate mine with some chicken breast I marinated and air fried and some cucumber on the side.
Ingredients (chop everything, leave a bit chunky)
1 head of cabbage
3 carrots
3-4 celery stalks
1 Visalia onion
6-8 garlic cloves
2 bell peppers
1 bunch of dill and parsley
1 cup rice
1 TBS chicken boullion (or veggie)
Chicken broth to cover (veggie stock or water work as well to keep vegan/veggie friendly)
A couple good glugs of olive oil π€
4-5 lemons (fresh juice is best)
Salt and pepper to taste
Directions:
Chop everything - I like to put the βheartier veggies in first and sautΓ© a bit before adding rice and cabbage but Iβve also made it where I sautΓ© the rice in the onion and oil first too. This is a very forgiving recipe
Bring to a boil and cover, stirring every few minutes
I think total cook time was around 30 min until everything was soft but as long as the rice is cooked - cook to taste!
