It’s honestly so surreal seeing how much love you guys have for Doki crepe cakes these last couple weeks 🥹

What started as me obsessively researching, testing, flying to LA to study cakes layer by layer, and nervously introducing something completely unfamiliar to Utah… somehow became one of the biggest parts of Doki.

Back then, I genuinely didn’t know if people here would even be open to crepe cakes… let alone flavors like pandan, ube, lychee, and yuzu 😭

But you guys opened your hearts, your taste buds, and supported every crazy idea I had along the way.

From hundreds of crepe batter tests to finally finding the perfect organic vegan stabilizer for the cream, these cakes have grown so much over the years — and honestly, so have I.

Thank you for letting these delicate little cake babies become part of your birthdays, celebrations, late night cravings, and sweet memories 🫶

And I promise… this journey with crepe cakes is far from over 😤💪❤️🍰

Whole crepe cake pre-orders are now open for this weekend ✨🎂

Many of you missed the last few rounds and messaged me about home pick-up, so this weekend I’m opening very limited spots [only 10] for whole crepe cakes, made fresh in my little home bakery with so much love 🥹🤍

There’s something so special about making whole crepe cakes, from creating the flavors to carefully decorating each one, because I know they’ll be part of someone’s sweet moment; and that means everything to me.

I only have 4 days left, and this will be my last weekend making them for a little while. Between packing and teaching my family some of Doki’s recipes, I can only take a few orders, so if you’ve been hoping to grab one, now is the time 🫶✨

These recent pop-ups have been one of the most beautiful, exhausting, emotional experiences of my life 🤍

Ever since closing Doki and moving into this tiny home bakery setup, every single process has become harder than I expected. Smaller kitchen. Smaller workspace. Smaller workflow. Things that used to take minutes now take hours. Even with careful production mapping and planning, time somehow disappears so quickly and I massively overestimated how much I could physically produce without the storefront kitchen.

The truth is… without my parents, none of this would even be possible.

These recent pop-ups had us running on almost no sleep, sometimes 30+ hour production rounds, just trying our best to get everything done in time while constantly adapting to problems that came up during baking and prep.

My dad literally jumped in to help me right after waking up from anesthesia from his colonoscopy procedure. My mom barely had time to eat, maybe once a day, and kept saying she’d “do her hair later” because there was always something else to finish first.

But we LOVE every single second of it!!!

They barely speak English, but they LOVE seeing everyone at the pop-ups. They love seeing the support, kindness, and excitement from this community. Ever since moving from Vietnam, I haven’t seen them smile and come alive like this in such a long time.

I know people say food brings people together… but I don’t think I fully understood it until now.

So thank you. Truly.
For supporting this tiny little bakery.
For showing up.
For giving my parents something to look forward to every week.
For helping this new chapter of Doki feel alive 🤍

And somehow… these will be my last TWO pop-ups before heading back to Asia for a little while 🥹

I honestly still can’t believe this tiny home bakery chapter turned into something so special this quickly. Getting to create cute little desserts again, seeing everyone show up, hearing your reactions in person… it’s been healing a part of me I didn’t even realize needed healing.

Pre-orders for both pop-ups are OPEN NOW ✨
Last call for pre-orders will be TOMORROW at 5PM so I can properly prep everything in my tiny kitchen!!!

And if you’re planning to stop by in person… I *might* have some extra special desserts at the pop-up that won’t be available online 👀

When I announced that Doki was closing a month ago,
I told my parents something I hadn’t fully admitted out loud yet

I still want to bake…
I just couldn’t carry the weight of a storefront anymore 😔

The long hours, the pressure, the responsibility… it got too heavy.
But the love for creating, for making something with my hands, for sharing that with people… that never left.

So they listened. Really listened!
And then they did something I’ll never be able to repay 🥹😭😭

They started building me a tiny bakery… out of their back patio, BY THEMSELVES!

Piece by piece. Day by day.
Turning a quiet corner of home into a place where I could start again.

Today…
Doki is empty.
And my little home bakery is ready.

Same heart. Same hands.
Just a different beginning.

There is truly nothing like a parents’ love 😭❤️🤍

Doki’s first pop-up menu for next week at Tea Barn + Picnic Cafe 💚💜

I’ve been so deep in my chef + creative mode again!
Testing, tweaking, plating, dreaming. And honestly, I can’t wait to share all of this with you. This is the part I love the most!!!

But at the same time, it’s also soooo scary.
For the first time, I don’t have Doki as my safety net anymore.
If I make too much, there’s nowhere to send the extras…
If I make too little, there’s no kitchen or team behind me to restock.
It’s just me, showing up with what I made and hoping it’s enough!

At this very moment, I have so much more respect and admiration for pop-up chefs and artists. Constantly living in that uncertainty every single time, and still creating something beautiful for people… that’s honestly amazing!!!

So if you come by next week — just know every single thing was made with so much heart (and a little bit of fear, and probably tears, too hahaha) 🤭🫶

Today humbled me.
I thought the hardest part was making the cakes…
but it was everything after that I didn’t fully prepare for.
Packaging. Timing. Traffic.
When I had the storefront, everything felt seamless because it was all in one place.
Now I’m learning what it really takes behind the scenes.
I’m grateful for the lesson, even if it came the hard way.
I’ll do better next time 🤍💜

Over the past week, so many local businesses reached out wanting to collab, host, and support Doki… and it honestly means more than I can put into words
