When we had our coffee trailer a couple of years ago, I developed medium-dark roast that we used for all of our espresso based drinks. It was very popular as it was the base for some very tasty drinks. I just roasted a few batches of those Kenyan beans, and it is available in the stand. It has the label of Signature Espresso. It is available in the stand as whole beans, but if anyone needs me to grind them for espresso just let me know. I can grind a batch and put them out there.

I put some light roast sumatra beans in the stand today. Some light roasts are a little weak for my personal taste, but it sure lets the more subtle flavors shine through. The Sumatran beans have some fruity notes in the flavor. I brewed the coffee a little stronger than normal and it was really good! If you try the light roast don't be afraid to vary your coffee/water ratio.

ā˜• NOT ALL COFFEE BEANS ARE THE SAME
Ever wonder why fresh-roasted specialty coffee tastes so different from the coffee you find on a grocery-store shelf?
It starts before the beans ever reach the roaster.

ā˜• WHAT DOES ā€œSPECIALTY-GRADEā€ COFFEE ACTUALLY MEAN?
You’ve probably seen the words ā€œspecialty coffeeā€ before—but what does that really mean?

It starts with the green coffee bean, long before it ever reaches the roaster.

🌱 QUALITY FROM THE START
Specialty coffee is produced and selected with quality in mind. The beans are evaluated for things like defects, consistency, processing, moisture and, ultimately, how the coffee tastes in the cup.

šŸ”Ž FEWER DEFECTS MATTER
Raw coffee can contain damaged, immature, insect-damaged, mold-affected or improperly processed beans. Higher-quality coffee is carefully sorted and graded to minimize these defects.

ā˜• THEN COMES THE CUP
Coffee professionals evaluate—or ā€œcupā€ā€”coffee for characteristics such as aroma, flavor, acidity, sweetness, body, balance and aftertaste.

Traditionally, coffees scoring 80 points or higher on a 100-point cupping scale have been considered specialty coffee. Today, the specialty-coffee industry is moving toward a broader evaluation that looks beyond a single score, but quality in the cup remains at the heart of it.

šŸ”„ AND THEN IT’S THE ROASTER’S TURN.
Buying great green coffee is only the beginning. Roasting is where we try to bring out the flavors and character already inside those beans—and freshness matters after that.

At Bigfoot Brew Coffee Co., our goal is pretty simple:

Start with better coffee. Roast it fresh. Put better coffee in your cup. ā˜•šŸ¦¶

ā˜• FRESH COFFEE REALLY IS DIFFERENT.

That bag of coffee on the grocery-store shelf may have been roasted months ago. Coffee doesn’t spoil like milk—but after roasting, the flavors and aromas that make great coffee special gradually fade.

At Bigfoot Brew Coffee Co., we start with premium green coffee sourced through specialty coffee importers and roast it fresh in small batches right here near Salem, Indiana.

🌱 Quality PREMIUM green coffee
šŸ”„ Fresh, small-batch roasted
ā˜• More aroma, more character, more flavor

Once you’ve had truly fresh-roasted coffee, that grocery-store bag just isn’t the same. Give our coffee a try, see the difference.
If you are out and see guys from Knobstone Coffee Company, give their coffee a try as well. It is also freshly roasted and very good!
