𝗜 𝗱𝗼𝗻’𝘁 𝗯𝘂𝘆 𝗕𝗕𝗤 𝗳𝗿𝗼𝗺 𝗺𝗮𝗻𝘆 𝗽𝗹𝗮𝗰𝗲𝘀.

For three years, I saw the BBQ signs at Spring Valley Golf Course but never tried it because, honestly, I assumed it wouldn’t be that good.

𝗜 𝘄𝗮𝘀 𝘄𝗿𝗼𝗻𝗴.

Sweet Caroline’s BBQ seriously impressed me. They run WSMs, offer multiple sauces, and the 𝗦𝗻𝗮𝗸𝗲 𝗥𝗶𝘃𝗲𝗿 𝗙𝗮𝗿𝗺𝘀 𝗚𝗼𝗹𝗱 𝗟𝗮𝗯𝗲𝗹 𝗯𝗿𝗶𝘀𝗸𝗲𝘁 was off the hook. The mac and cheese, cowboy beans and sauces were all excellent.

The Carolina slaw wasn’t for me, but I already knew it probably wouldn’t be. Everything else was legit.

They had a few things that were honestly better than mine, and I don’t say that often. I wish I had tried them sooner.

Spent yesterday in full BBQ mode putting together a couple heavy hitters for the Preakness party 🍻

🥩 𝐁𝐫𝐢𝐬𝐤𝐞𝐭 𝐅𝐫𝐞𝐧𝐜𝐡 𝐎𝐧𝐢𝐨𝐧 𝐃𝐢𝐩
Smoked brisket mixed into a rich creamy onion dip that disappeared way too fast 😤

🌶️🍋 𝐉𝐚𝐥𝐚𝐩𝐞𝐧̃𝐨 𝐋𝐢𝐦𝐞 𝐂𝐢𝐥𝐚𝐧𝐭𝐫𝐨 𝐂𝐨𝐥𝐞𝐬𝐥𝐚𝐰
Cool, crunchy, fresh, tangy, and just enough jalapeño kick to cut through all the BBQ goodness 🔥

One thing about BBQ parties…
People always hover around the smoker.
But the sides? 👀
That’s where legends sneak onto the plate.

Both clocking in just under 𝟒𝟎𝐆 𝐎𝐅 𝐏𝐑𝐎𝐓𝐄𝐈𝐍 per serving 💥

Nothing fancy. No overthinking.
Just clean, solid, “feel good after you eat it” kind of food.

Crunch from the veggies 🥒
Creamy from the mix 🥑
Protein doing its job behind the scenes 💪

This is the kind of stuff that keeps the engine running between BBQ sessions…
because even pitmasters need a reset plate once in a while 😎🔥

𝗗𝗕𝗤 𝗗𝗲𝗻𝗻𝘆’𝘀 𝗕𝗕𝗤 🔥
𝗡𝗲𝘄 𝗧𝗼𝘆 𝗔𝗹𝗲𝗿𝘁… 𝗠𝗲𝗮𝗱𝗼𝘄 𝗖𝗿𝗲𝗲𝗸 𝗕𝗫-𝟱𝟬

First cook is in the books… and man what a ride 😤🔥

This thing is an absolute BEAST. Took her out for a spin with some ribs and right away you can tell… this smoker is built different.

Not gonna lie… fire management humbled me a bit today 😂

• Took about 2 HOURS to climb to 250
• Held 250 for ~3 hours
• Then slowly drifted down to 220

After watching it, I think I know exactly what happened…

Only lit 2 fire starters and had the fan ripping at 100% the whole time — basically forcing the fire instead of letting it build naturally.

𝗡𝗲𝘅𝘁 𝗿𝘂𝗻 𝗽𝗹𝗮𝗻 👇
• Start with 1/2 chimney to build a stronger coal bed 🔥
• Let the fire establish BEFORE shutting the firebox
• Let the smoker work… not force it

𝗕𝗨𝗧 𝗛𝗘𝗥𝗘’𝗦 𝗧𝗛𝗘 𝗧𝗛𝗜𝗡𝗚…

The FLAVOR… 🤯

Ran a mix of:
• B&B Briquettes
• FOGO Gold Lump
• Post Oak + Cherry

Smoke was PERFECT for Midwest style — not quite as deep as I personally like, but man… crowd-pleaser all day.

And the taste? One of the BEST I’ve ever done. Deep smoke, clean burn, killer bark… the kind that makes you stop talking mid-bite.

Still dialing it in… but we’re CLOSE.

This Meadow Creek BX-50 is about to be dangerous once it’s locked in 😎🔥
