Chance.
That’s really what so much of this started with. Taking a chance on an idea, on a building, on myself, and believing I could build something out of absolutely nothing.
And I didn’t do it alone. There have been a lot of people along the way who helped build pieces of this place—friends, family, employees, regulars, musicians, vendors, and people who showed up exactly when I needed them. I’ll always be grateful for that.
But one of the biggest lessons I’ve learned is that NO ONE sticks around forever. And that’s alright.
Menus change. Employees change. Operations change. Relationships change. The way you ran the business six months ago might not work today. You learn. You adjust. You screw some things up. You fix them. And somehow, you keep the doors open and keep moving forward.
There have been days when I wondered what the hell I got myself into. There have been sleepless nights, empty bank accounts, payroll stress, equipment breaking at the worst possible time, staffing headaches, long days that turned into longer nights, and mornings when I woke up already exhausted.
But damn, it has been exciting.
Every. Single. Second.
Even the hard parts.
Because there’s something pretty incredible about standing inside something that once existed only as an idea in your head and realizing we built this.
Not perfectly. Not easily. And definitely not without a few scars.
But from nothing.
And the wildest part is realizing it’s still being built. The menu will change again. The people will change again. The operation will evolve again. I’ll change again. That’s the chance you take when you decide to build something of your own. And I’d take that chance again and again and again.
Here’s to keeping the lights on for three years, in just two weeks…
