What is causa ?
It could be a dish or it could be the way you call a friend, in Peru we use the name of this dish to say “ Hi causa !” Not exactly sure why but you can go eat causa with your causa.

Causa (food wise) is made of lemony potato, ají amarillo paste and a few other secret ingredients. For this version we use chimichurri shrimps, rocoto aioli, chalaca, avocado sauce and extra love.

What is AYLLU?
Is the Basic social formation of the Inca Empire. It is associated with the concept of community. All without exception are members of the ayllu, entering the same from the age of two years.

The responsibility for the well-being and progress of the community rests with each of its members. Within the ayllu there is a structure of participation, leadership, incentives and mechanisms to guarantee its proper functioning.

One is part of the community and the community is part of one.

The largest part of Peru is the jungle, there we will find unique and exotic ingredients that inspire any adventurous cook, one of the best known dishes is the tacacho with cecina, which is basically smashed plantains with lard, cecina and salt. each region has its own style and personality. Here is a small tribute, with respect and affection to the entire Peruvian jungle.

Tacacho con cecina:
Smashed green and ripe plantain, homemade pork cecina, mango criolla salsa, garlic confit aioli, chicharrón, togarashi
