Meet some of the flavors we're bringing to the table during our Garden to Table Dinner this fall.

We've been sourcing them all over the east coast, and of course, right here in St Pete too.

Our menu will be full of wild foraged ingredients, as well as local home grown veg sourced from gardens that we love. It's going to be a night to remember.

It's a celebration of home grown, hand gathered food, slow processing, the harvest season, the abundance of it all.

Join us on October 19th at 5:30pm, we can't wait to host you.

Meet Angela Minno, she is a dear friend of ours and one of our favorite people to have teach classes at Beech.

She is a homesteader with 20 years of experience and let me tell you...it shows! We learn so much from her every time we have her come.

Through an unfortunate separation, Angela lost her farm and micro creamery.

Over the past year or so we've watched her rebuild her farm on new land from the ground up, we've never seen a homestead be built so fast!

This fundraiser is to raise the funds needed to purchase a new milk cow to restart her creamery. Beech will be making sure that ALL of the profits will be going toward that goal!

There are still 15 spots left for the cheesemaking class!
October 3rd, 2pm and 4pm.

We cut down the first tree we ever planted in the garden.

The Jamaican cherry was planted as a fast growing canopy tree to shade our understory permaculture food forest.
..but it's not a sob story, it's something new and beautiful. ✨

Our Jamaican cherry provided rapid shade as our first ever canopy tree in the hot parking lot our garden once was, it provided constant delicious cotton candy berries too.......but they only have an average 5 year lifespan, and as it was reaching 5 years old, we could see it rapidly declining, dying branch by branch.

It also was not planted correctly, it was planted underneath the canopy of our orchid tree, and it grew completely sideways, desperate for the full sun that it needed!

It lived it's full lifespan, shading so many understory plants that we needed to shelter. We're so grateful for its service!

And to take its place we put in a 7 year old Valencia pride mango. Which with very little effort (and now much more sun, will grow rapidly into a canopy tree for the garden.

The branches and logs of the Jamaican cherry will be used full circle in the garden, becoming mulch, firewood, and filling up garden beds with logs for a hugelculture style garden bed.

We'll also be planting a new Jamaican cherry outside of our fence where it can get all the sunlight it loves.

Our secret garden nook is getting the pressure washing it needed after being inundated with months of berries dropping.

We can't wait to put a little canopy and lights in this little nook while we wait for the Valencia pride mango to get large and in charge!

We 👏🏽 are 👏🏽so 👏🏽exited 👏🏽 about 👏🏽this!

October 19th 5:30pm join us in the botanical garden.

Only twice a year do we put on our bi-annual garden to table dinner.

Join us for a night of wild crafted and garden grown good foods, served family style, surrounded by lively company, evening lights, and garden glow.

This year we are celebrating the WILD harvest, excited to bring you flavors and foods that you may have never tried before, and yet grow so abundantly all across the Americas, wild and free (except for the labor of love for those who harvest it, that is).
