🌶️ THIS WEEK’S HISPANIC HERITAGE MONTH FEATURE: MOLE MANCHAMANTELES
One of the most emblematic dishes in Mexican cuisine. Its roots trace back to the prehispanic period, making it one of the first dishes created in the Americas, born from ingredients gathered across different regions.
Traditional Mole is a complex, rich sauce built from dozens of ingredients blending Mesoamerican and Spanish culinary traditions: dried chiles, almonds, peanuts, pumpkin seeds, sesame seeds, onion, garlic, tomatoes, green tomatoes, apples, chocolate, cinnamon, cloves, black peppercorn, coriander, cumin, oregano, all simmered into a rich chicken or turkey broth.
