Hey folks — thanks for all of your support over the summer. It’s been amazing meeting so many new faces in our cafe and at the farmers markets, and finding our bread on the shelves at new places. More new faces means... we need to make more bread! (Swipe to keep reading)



We’ve heard your feedback about us running out of your favorite things when you come in. So as we turn toward fall, we’re making a few changes to our bake schedule in order to keep up.

Our bakery is ... not huge ... so we’re giving more of our time and oven space to the breads you love most. More bagels and more hearth loaves (House Loaf, San Francisco, Porridge, Miche) are coming soon!

For now, we are rotating-out three of our daily features: Baguette de Tradition, Focaccia, and Pane Francese. We love them too. (Don’t worry: Friday Challah isn’t going anywhere.)

We’re also going to be rolling out new ways to pre-order your favorite bread, and find out what we have in stock before you come in. And our fall cafe menu is coming next month! We’re really excited about what fall looks like at Razava. And to everyone heading into the High Holidays, wishing you a sweet new year.

A little something sweet for the season. 🍎

This week’s special brings together apple butter and creamy ricotta on our sourdough toast, finished with spiced walnuts and fresh orange zest.

With the High Holidays around the corner and fall not far behind, apples felt like the right place to start. Sweet and rich, balanced with creamy ricotta, warm spice, and a little brightness from the orange.

Did you know everything we bake is sourdough?



You heard that right, ALL of the bread you’ll find at Razava is sourdough.

The confusion is fair. Somewhere along the way, sourdough came to mean one particular loaf — a golden blonde boule, lightly flour-dusted and blistered across the top, and tangy enough to make you tear up.

Today, the term is everywhere.

You can call something sourdough…but if you don’t give it enough time to become real sourdough...all you’re left with is a faint tang and a marketing tagline.

Time never shows up on an ingredient label. It costs more than the flour. And it’s the first thing a bakery in a hurry learns to cut.

Sourdough doesn’t mean sour bread.
Done right, it means flavorful, digestible bread.

Aggressive tang is often a sign of an over-aged culture or dough left cold too long—not what defines real sourdough.

Sourdough isn’t an easy way to bake. Some days the dough runs faster than we’d like, some days slower, and not every loaf goes to plan. We’d rather say that plainly than pretend a bakery built on a live culture hits the identical mark every morning.
