Las Tablas - Pacamara 🌻🍰

This coffee comes to us from Las Tablas, a farm that is apart of the Tierra Bendita Biokrop project. This project brings together coffee farmers across El Salvador to grow and produce exceptional coffee focusing on soil health, sustainable agricultural practices, and no use of biochemicals.

We've consistently enjoyed the Pacamaras we've gotten from this project with this seasons being no exception, this lot is reminding us of Dandelion, Yogurt, and Marzipan.

Carter walks through how we approach hand brewing in our cafes. This is where we start with almost every coffee at the bars as well as how we do quality control and how we taste for notes.

Recipe:
Water temp: 198 degrees Fahrenheit
Brewer: Origami Resin S
Brew Ratio: 1:17 (20:340)
Grind size: medium/ fine, based on preference
Pour structure: For a 20g dose.
Bloom 60g for 1:00, at 1:00 start medium agitation pour to 200g, when the water is almost fully through start your third pour to 340g, we like to do low agitation and center focus on the third pour

Finca El Izotal - Pacamara 🍊🍈🍫

Located in the Chalatenango region Finca El Izotal sits fairly high at 1650-2030 masl, making it an ideal place to cultivate coffee. Alfonso Pineda has placed multiple times in the Cup of Excellence auctions in recent years with his Pacamara and his Gesha varieties.

We're really enjoying this Semi-Washed Pacamara we have from him, it's showing us notes reminiscent of Valencia Orange, Cucumber Melon, and Milk Chocolate.

Burundi - Masha 🍓🥮

The second Burundi we selected this season comes from the Masha Washing Station in the Kayanza region. The word Masha comes from the Kurundi word “amasho," meaning “herds of cattle,” as this area is known more for its cattle than anything else. The Masha Washing Station accepts coffee from over 3200 farmers in the region all with around 300 coffee trees, and all reliant on coffee to support their livelihood. In this coffee we're experiencing pastry like sweetness and some very nice brightness. This coffee reminds us of Raspberries, Pomegranates, and Shortbread.

Available at all locations as Espresso or for brewing at home.
