This restaurant game is tough!

For the last year, I’ve thrown everything I know at making Salt & Flour in the North Loop Green work. We’ve had some wins, but financially it’s been crushing… I’m incredibly proud of our team and all they’ve done.

I’ve known for a while what we were doing, for some reason, just wasn’t working… as my business partner likes to say—if nothing changes… nothing changes.

So here we go.

We’re flipping everything.
New menu from top to bottom… new small plate format. Nothing over $15.
All new pizzas… pastas… and fun bites.
All new lunch program focused on salads and grain bowls… built to take back to the office or sit on the patio.
Brand new drink and wine program…

This new format is 100% based on my two weeks touring Italy… and a lifetime spent in the kitchen. Chef Gary is bringing his A game, and I can’t wait for you all to try it.

When you’re a restaurant guy, giving up is not an option… we risk our future with every restaurant, with every move we make… restaurants are incredibly personal. Most of us paint the walls, drive nails, put tables and chairs together just to make it work.

We’ll put our heads down… adapt… and change to fit what our guests need.

Time to increase our quality… have fun with what we’re doing… and give a great value so more guests can come more often.

Restaurants are hard. Always have been….
So is life….

Fifty-plus years on this earth… and most of it I spent trying to figure out where I belonged.

House to house. Dad’s. Mom’s. Aunts. Friends.

Three fathers gone along the way. Front row seats to the highs… and the kind of lows that stay with you for a lifetime..

And a mom… who refused to lose. Who willed a better life into existence for me.

School didn’t fit. I didn’t fit.
So she put me in a kitchen.
That changed everything.

Restaurants are brutal.

They’ll chew you up. Spit you out. Then ask if you’re coming back tomorrow.
I respond….YES CHEF..

You’ll be called the best… and five minutes later your the worst… The world will punch holes in all your insecurities.

Reviews. Media. Keyboard warriors..

And through all of it… we’re just trying to cook for you.
To put something on a plate that says—this is who I am. This is where I’ve been. This is what I’ve survived.

I’ve lived every inch of this..
Busser. Dishwasher. Line cook. Server. Bartender.Chef. Manager. CEO.Owner.
35 years.

Long enough to know… this life will either break you or build you into something you didn’t know you could be.

Kitchens don’t care where you come from.

Different languages. Different beliefs. Different stories, you stand shoulder to shoulder anyway.

Yeah… it’s messy. You’ll get burned. Cut. Scarred. Some you see. Some you carry.

But the magic…for me..

It was the family meal. A line cook handing you something from his childhood… from a country you’ve never been to… from a life you’ve never lived.
That’s where the truth is found…

Food is a story.

The world’s louder now.

Everyone’s got an opinion. People who love you. People who wait for you to fall.

And somehow… we keep showing up.

Because this was never just about food.

We started by feeding the traveler. The tired. The worn down.

Food was restoration.

And somehow we turned that into a transaction.

Money… for something most of us would give away for free if we could.

You sit down at a table… and something happens.

You give something. We give something.

We leave a piece of ourselves in what we cook. You bring your story through the door.

And somewhere in the middle… we restore each other.

Restaurants are hard. Always have been. Always will be.

But sitting around a table… breaking bread… sharing something real…

That might be one of the greatest things we have left.

Don’t forget that.
