*Aizu Chujo Daiginjo Hattanishiki - made by female toji-Yuri Hayashi โ notes of cucumber, honeydew melon, marcona almond โ super elegant and refined at 40% polish.
*Tsuji Zenbei Junmai Ginjo Muroka Nama Genshu Omachi - a big, juicy, chewy expression of Omachi rice, with notes of summer peach, honeysuckle, and fresh bread.
*Gunma Izumi Yamahai Junmai Maikase - a richly-umami, beautiful sake for Fall โ with notes of toasted quinoa, banana bread, dried cranberry, and nutmeg.
