Once bagels are shaped, the dough needs time to “relax” before kettle-boiling.

That resting stage allows the gluten to relax, so the bagels keep their shape, expand properly, and develop that chewy texture we all love instead of becoming dense or tight.

It also helps create a smoother surface and a more even crust once they hit the kettle and oven.
