That’s how long this Bluefin Tuna rested in our dry-ager — slowly developing deeper color, richer umami, and a melt-in-your-mouth texture you can’t rush.

Today we broke it down and served it in its purest form:
dry-aged akami, chutoro, otoro — each one a different experience.
