For over twenty years Paul experimented with slow cooking his foods in search of a technique that would produce tender, fall-off-the-bone meats that would do justice to his favorite childhood meal - the pork rib and chicken combination from the now-defunct Sacramento institution, The Western Rib House . In the beginning, failures were the best lessons! It all started with chicken and a Weber kettl
e grill, but soon it was ribs in the work parking lot on the fourth of July and block parties. From there, Paul further refined his technique and the Weber became the sidekick to a larger smoker. In 2004, Paul's uncle offered to build a custom smoker and that started his mind turning. For over a decade, a lot of thought was put into exactly what this smoker should be able to do. Before long, the size that would be required was growing and growing to the point where it was rivaled in size only by Amy’s patience and understanding. The result is an apparatus capable of doing something no other known barbecue smoker is capable of doing - smoking, direct grilling, and rotisserie, all with unprecedented and innovative control to ensure the perfect exposure of the food to smoke. The story of Malieakala is not complete without an explanation of our name. Shortly after their honeymoon on Maui, Paul and Amy began looking for a family dog through local rescues, leading them to a sweet lab named Miley. Sadly, Miley was not treated with the love she deserved by her former family and consequently had developed a reserved, quiet personality (it took twenty minutes for her to come up to Paul at first). Wanting to give her a new start, Amy suggested her name be changed to the Hawaiian word for calm, Malie, as both a nod to their new family member’s temperament as well as in honor of the fantastic time they had in Hawaii. Over the next six months, Malie’s natural labrador personality slowly emerged, eventually earning her an addition to her name of “akala” (Hawaiian for the vivid color of pink, which can be seen with the sun rising or setting while atop Maui’s volcano, Haleakala). While a perfect name for their furry addition, Malieakala also is the ideal moniker for the smoker, as it describes both the slow, steady nature of cooking (malie) and the intense color of the fire (akala).
