From the vineyard to the cellar, every bottle of Parés Baltà carries the story of the land. 🌿🥂
High in the hills of Penedès, vines grow among forests, mountains and diverse soils—farmed organically and biodynamically to encourage a thriving, balanced ecosystem. Each vineyard has its own personality, and every grape is grown to express the place it came from.
That story continues inside the cellar.
Here, w**emaker and co-owner Marta Delfa guides each w**e with patience and a light touch. Chemical additives are avoided, sulphites and filtration are kept to a minimum, and plant-based products are used when gentle fining is needed. The w**es rest in ceramic amphorae, glass demijohns and stainless-steel tanks—vessels carefully chosen to preserve their natural character rather than disguise it.
The result is Cava that feels alive: expressive, elegant and deeply connected to its origins.
On September 15 & 17 (Sac & WC Locations) Marta will take us inside this world—sharing the journey from living vineyard to finished bottle and pouring the remarkable w**es that journey creates.
