With Volume 1 of 10 interesting people, we changed the way we start our experience. Now we start you off with the history of Localis through 3 bites!
Opening night was July 10th of 2015. We had an Ă la carte and a tasting menu and our tasting menu started the way you start your day, breakfast!
Fried heirloom potato, miso compound butter, fried quail egg and cured duck egg yolk.
In the middle of our time we started cooking a lot of childhood food memory menus. The stuff that your grandma or your mom would make as a kid. Chef's mom always made french onion dip on Sundays with off-brand potato chips.
Sherry vinegar potato pillow filled with aerated French onion dip and topped with Tsar Nicoulai golden reserve caviar.
When we finally reopened after covid we had a whole new space, we also had gone tasting menu only. The best dish we've had on aemu so far was on reopening night, thai beef carpaccio! Your final.bite of the trio is a version of that...
Tapioca pearl chip of ginger and lime leaf, Mishima Reserve, wagyu, filet mignon tartare with versions of trinity herbs on top.
We always pour an amazing champagne as a pairing on the house as well.
