Every six weeks, Localis transforms. Two weeks ago, somewhere between Saturday’s last course and Wednesday’s first, a new menu came to life.
The market in the morning, the kitchen all afternoon, two days of cooking, trying and adjusting, Tuesday night a room full of our team eating it all together. And then Wednesday. New menu, new story, 10 more interesting people.

is one of out favorite people to ever work at Localis. As a manager he embodied the idea of hospitality and always giving time to those that wanted it.
Well dressed, we'll mannered, well adjusted and all around sweetness as a human.

His interview was amazing and the end was where he talked about a dish from his homeland that he's never been to, something that was on his heart for some reason unknown to him. It had to include pork, fish and Saffron.
After some research we found a dish that had those ingredients in it from his exact hometown of Burguet-auritz. We didn't want to do that exact dish so we sourced our favorite idea from the towns culinary history and composed his dish to represent him!

Black bean and piperade puree, pork Tenderloin brined in Saffron, ahi tuna chorizo, red and yellow flowers for the flag of Spain and New Zealand spinach.

A single conversation can change everything. Sometimes it changes a dish. Sometimes it changes a restaurant. Sometimes it reminds you what you already knew but had forgotten.
The ingredients are the vessel but the story is the point. Tonight we begin serving 10 Interesting People, Vol. 4: A Diaspora of Impactful People.
A menu built from the lives of ten people whose stories span the entire globe. Meals worth talking about, in the end, are just a way of getting at the most precious gift any of us has. The human capacity to love.

June reservations open today at 11am PST on Tock. 10 Interesting People Vol. 4: A Diaspora of Impactful People runs May 6th through June 13th. This is easily the most eclectic group we’ve had so far, and possibly the most impactful to date and we still have a few seats available in May.

After June 13th we begin Volume 5: The History of Localis Through Its People.
