With the passing of the Queen of Country we wanted to honor her with her very own chicken casserole. I found this in her cookbook, which I purchased at Dollywood a number of years ago. This casserole has quickly become a family favorite and we believe it will for you and certainly will help you get a meal on the table in a flash when you've been on the job from 9 to 5. 🩷

#1 Dolly's Chicken Casserole 🆕- $21 ($3.50 per serving)(Oven)Roasted all white meat chicken in a creamy white sauce cooked until thick and rich. (No veggies - kid friendly) Topped with a buttery crumb top. serves 4-6 in a celebratory Pink Pan 🩷 Allergen: Dairy, wheat 🦋

#2 Italian Beef - $24 ($4.00 per serving) (CP) There's nothing better than to come home to the aroma of this dish. Perfect for sandwiches in this busy season. Serves 4-6. May be split. Allergen: wheat

If you find yourself with excess sweet corn and a spare minute this soup is terrific, easy to whip up and freezes like a dream. Will be oh so yummy this winter!!!

Chicken Corn Chowder

1/4 c. Butter
1 lg onion, chopped
1/4 c. Flour
1T paprika
2 medium potatoes, peeled and chopped
1 32 oz. Carton chicken broth
1 rotisserie chicken, skinned and shredded (certainly can use less)
6 c. Fresh sweet corn, cut off the cob
1 T Worcestershire sauce
1/2 ts. Hot sauce (optional)
1/2 ts. Salt
1 c. Whole milk or cream

(I added some diced green chilies to mine)

Melt butter over medium heat. Add chopped onion and saute until tender. Add flour, and broth. Stir well. (May transfer to the crockpot at this point). Add additional items except milk. Cook in low/medium heat in Dutch oven until potatoes are tender. (Crockpot) 4-6 hours on low) Stir in milk/cream. Let heat through. Serve. Garnish with shredded cheese and corn chips or croutons.
