Growing up in New York, there's such a diversity of food. Chinese food, Italian food, tons of Caribbean foods (Dominican, Haitian, Cuban, Puerto Rican, Jamaican, Trinidadian, etc etc) Jewish bakeries, Jewish delis, Nigerian food, Mediterranean food, the list goes on and on. Everything and anything you could think of pretty much. When it comes to cooking, my specialty is Afro-Cuban and Afro-American foods. However, I am not limited to those cuisines. That's what is exciting about being a chef. We understand the fundamentals of food. This way, if we want to recreate something we are craving or something nostalgic, we can. I attribute my cooking style to being a New Yorker. A little state with the world packed into it.
