The term Pizzaiolo originated in Old World Italy. In the ancient villages, there were many places to find pizza in the markets. But every village had one that stood out in a unique way, and generally, the person driving that shop was referred to as a Pizzaiolo. Each Pizzaiolo was considered to be a master pie maker. Stuff You Should Know…

We get to work each day at 5:00 a.m. Believe it or not, making great food from scratch takes a while. Our dough is a very simple recipe of wheat flour, water, salt, sugar, yeast, and EVOO. We do not use volumizers, additives, or preservatives. Our dough is aged. Time and temperature help the yeast create an optimal dough ball with great flavor. We use Stanislaus tomato products. These guys are the number on fresh packers of tomatoes in the world. The tomato literally goes from the vine to the can in 6 hours. I have been to Modesto, California to witness their claim and tour their facility. They even let me ride on a tomato harvester. Their claims are not marketing. It is very impressive. We use whole milk mozzarella on the block which we grate daily. By doing this, we avoid preservatives, additives, and anti-coagulants that are present in most pre-shredded cheeses. We cut our vegetables fresh daily. We even use fresh pineapple. If you have never had them on a pizza…they are magical. We use fresh, hand-cut romaine lettuce as our salad bases. We do have organic spinach as an alternative. The chicken, sausage, and beef are seasoned, cooked, and chopped daily at the restaurant. We do this to create a signature flavor, and it tastes great!! All desserts are baked fresh at the shop. This includes the cakes, brownies, and lemon squares. To quote a very loyal lemon bar customer, “They are fine lovin’!!” We also now feature a dessert of the month! In Smyrna, we have seating for about 19 people. In our Midtown location, the seating capacity is for 85 people. We now have a dine-in area that can support nineteen people. If this patio rumor happens, we should be able to seat close to 50. Our service is awesome and efficient. That’s for dine-in, delivery, or takeout. We believe in the spirit of community. We give, donate, and help where we can to build a stronger, more genuine sense of community. Our crew is unique, full of colorful personalities and varied backgrounds. All are committed to the ideals we employ here and to giving each customer the best possible experience. We welcome your feedback and suggestions. It is the only way for us to improve where needed. Growing up, my family in Alabama canned their overflow from the garden every year. I knew it was possible to find the right solution to lower the sodium content and make a competitive tasting pepper. I did some beta testing at my house, and after several attempts, I found a pickling brine that would work for the jalapenos and a different one for the banana peppers.

This humungous bottle of vino may not be on our half-price wine list but we have a fine selection available nonetheless!...
