Meet Jeffrey Thibodeau of Terra Optima Coffee . Several years ago, he joined the Specialty Coffee Association (SCA). He toured small and large farms in Costa Rica, learning how coffee is cultivated and processed. After attending Mill City's Roasting School in Minneapolis, he ordered an industrial roaster and launched Terra Optima Coffee! Since February, he has been roasting in Rockland where he enjoys the science of developing each bean's notable characteristics and blending coffee for flavor. His profiles are well-balanced, medium roasts that highlight the terroir of the region where the beans are grown.
