When it gets cold where Carmen grew up (trust me, 41 is cold on a tropical island), Mom's turn to Asopao to warm your soul.

Carmen woke to sub-20 temps today so she hit back with a batch of Asopao (Chicken, Rice and flavor). The lunch crowd loved it! She's already making her second batch.

Meet Meghan Underhill and Yuri Choi '25N (PhD) πŸ‘‹ As nurse scientists, they connected over a shared passion for supporting cancer survivors and their families.

Dr. Underhill advised Dr. Choi as a PhD student, and today, she works next door as a postdoctoral research fellow at Wilmot Cancer Institute.

Their mentor/mentee relationship is shaped not only by their shared research interests, but a love for all things Rochester β€” including some of their favorite foods, like the empanadillas at Carmen's Cooking in Brighton. πŸ‡΅πŸ‡·πŸ½

If you bought Pasteles (Puerto Rican "tamale") and / or Coquito (Puerto Rican Coconut Nog - no eggs) from us, we hope you enjoyed them fully!

Last week we caught up with summer again (but ran out before we could post). ❀️

Guava-Q Pork Ribs are finally on the Saturday Summer menu. Served with Corn Bread, and covered in Carmen's own Guava-Q, the ribs are good with any accompaniment.

We are still trying to see whether to bring back the Pinchos (kabobs) we had last year (chicken or pork). If you have an opinion or preference, let us know.

In the meantime, we hope you get to enjoy the ribs, and as always: Β‘Buen Provecho!

Mom's Lilacs bloomed beautifully this year. We hope you're enjoying the aroma of your own or those at Highland Park as part of the Lilac Festival.

If you want to enjoy the aroma of delicious food, stop by and taste Carmen's latest creation: Pork Tenderloin Roulade with Tri-Fongo filling. A wonderful blend of Carmen's signature seasoning and mashed cassava root and plantains (ripe and green). Served with your choice of Rice and Pigeon Peas (Arroz con Gandules) or White Rice and Stewed Beans.

For tomorrow, Happy Mother's Day to all who have nurtured and loved children in that special motherly way (birthed by you or someone else).

April has a 5th Wednesday. At Carmen's Cooking that means the Wednesday Special is Chef's Choice.

This Wednesday, the choice was not Carmen's but that of our customers, based on a limited test from a few weeks back.

We will offer Carmen's Homemade Flatbread with a choice of Pork Tenderloin or Chicken Breast, on a homemade flatbread covered with Raspberry and Gouda drizzle, Garlic Herb Aioli and Arugula. "Delicious" is just the start.
