You know what they say about an apple a day... 🍎

It was another perfect autumn afternoon for a little drive over to Preston for some amazing apples from . We had purchased Harrelson apples from them last year at the indoor market and have been hooked ever since. If you haven't been to their farm, they have a really cute market store and they bake fresh tasty treats right behind the counter. Yesterday I ate my daily apple turnover style 🙃

These Jonathans will be in the Pickled Beet Salad and the Grilled Chicken Panini. They are delightfully aromatic, tart & sweet. All around, just a really fun apple ☺️

What a BEAUTIFUL, perfect day! Working outside and I came across my first tunas! Not the fish, the fruit from a Plains Prickly Pear cactus (Opuntia macrorhiza).

If you're new to our story, I've been trying to grow cacti ever since discovering a variety native to Minnesota a few years ago. I struggled to find the perfect place for it to thrive. Then last year it really settled into it's new spot. This season they bloomed for the first time 🥹 The flowers are such a beautiful thank you for putting in the time. And then the icing on the cake are these adorable, edible little tunas 🎂

Speaking of mushrooms, check out this gorgeous Chicken of the Woods (Laetiporus sulphureus)!

This shelf mushroom can be found growing on the trunks of living trees. This one has a bunch of siblings that I'll be keeping my eye on.

When young, these mushrooms have been said to have a chicken like texture when cooked. It is often used as a meat alternative.

Last week with our homegrown cucumbers and tomatoes 🥹. After a few changes to our farmstead (we had to say goodbye to our chickens), we were able to produce the organic herbs, cucumbers, tomatoes, etc. we used all season in the trailer. It is truly a dream come true! I cannot wait to see what our farmstead can produce next year 🙏

As the days grow cooler, I will miss tending the gardens but I am also looking forward to having more time to focus on other things, like mushroom foraging! 😉

Cheers to another growing season in the books!

The tomato plants are really giving it their all this year 💪 Our little urban farmstead was able to provide the trailer with fresh tomatoes all season🥹❤️

We even had enough leftover to make a batch of Tomato-Bacon Jam 🤤 It's on the Braised Beef sandwich this week 🙌
