Today the Backyard BBQ got fired up at 5am to accept this Boston Butt for pulled pork. Dry brined for 8 hours with SPG and coated with Kosmo's Q Competition BBQ Products Dirty Bird. Smoked on the Masterbuilt Gravity Series 1050 with Jealous Devil Lump Charcoal and Apple Wood. 11 hours and 45 minutes later this Boston Butt pulled perfectly. Perfect bark with no wrap. Stalled at 174 and again at 192 but letting the Masterbuilt do its thing produced what we consider Championship BBQ. The MEATER probe was spot on and correct regarding temperature and when to pull to rest.

Prime Rib was on the menu for Christmas Day at Bakers Backyard BBQ! Ran at 250 for about 3 hours, pulled at 125 and served at 130. Rolled smoke with Cherry Wood and lump charcoal. The Masterbuilt 1050 ran like a charm in 20* temps and the MEATER was right as rain on temp accuracy. Rubbed with a mixture is Killer Hogs TX Brisket and Chimichurri Blend. Olive oil used a binder.

Ribs were being served at the Backyard Q yesterday. I firmly believe in the no wrap method. These racks were trimmed from spare ribs into St Louis Style. They were at an IT of 195-200 right at 6 hours running the smoker at 250. Pecan wood was the wood of choice for this cook. Fantastic ribs for dinner!

“Over the Top” Chili was on the menu today at the Backyard BBQ. Mixture of Beef and Venison (Thanks to Dustin Richards for the Venison) and the family chili recipe. Instead of cooking the meat in a skillet, smoking it catching the drippings. It’s was a keeper and this will definitely be on the menu for a long time.

7lb boneless Prime Rib was on the menu today at the Q. Seasoned with KosmosQ Cow Cover and a Bakers Backyard BBQ Texas Mix. Smoked at 225 for about 3 hours with a mix of Hickory and Cherry wood. Used the MEATER probe and they worked flawlessly. A finish temp of 127, perfect doneness for our family. Will have some leftovers for a second meal. This is the second year doing a Prime Rib on New Years Day and I see this becoming a tradition.

Smoke was rolling at the Backyard BBQ today. 15lb Turkey brined for 15 hours and smoked with Mesquite on the Masterbuilt 1050 for about 4.5-5 hours! It was fantastic!
