Summer salads don’t have to be a big production. Just grab whatever’s fresh from the farmers market or hanging out in your fridge and toss it together. (Everybody likes a good toss 😜) Don’t be shy about adding extra fruit to your savory salads, it totally works! I love making a big bowl of this so it’s ready to go when I’m hungry or lazy and it’s way too hot to even think about cooking. Ahaha 🤣
And let’s be real, between the lentils, veggies, and ALL the juicy fruit, this salad is basically fiber-packed rocket fuel. 🤣 You’ll be happily full, totally energized, and living your best life as a full-on regular pooping queen. 👑💨🤣🤣
Ingredients
• 1 can Lentils, rinsed & drained
• 1 Cucumber, diced
• 2 Mandarins, peeled and sliced
• 1 Apple, chopped
• 1 Peach, diced
• 4–6 Strawberries, sliced
• 1 small Red onion, thinly sliced
• 2 Carrots, sliced or shredded
Dressing
• 1 tsp Onion powder
• 1 tsp Garlic powder
• 1 tsp Cracked black pepper
• 1 tsp Tarragon
• ½ tsp Salt (adjust to taste)
• 1 tbsp Olive oil
• 2 tbsp White wine vinegar
• 2 tbsp White balsamic vinegar
• 1 tsp Maple syrup
• Juice of 1 fresh lemon
For fun top with a handful of:
• Pumpkin seeds
• H**p seeds
• Sesame sticks
Perfect for that extra crunch!
Instructions
1. In a large bowl, combine all chopped fruits and vegetables with the lentils.
2. In a small bowl or jar, whisk together the dressing: olive oil, vinegars, lemon juice, maple syrup, and seasonings.
3. Pour the dressing over the salad and toss to combine.
4. Add crunchy toppings just before serving.
And as always with cooking, feel free to add more or less of any of the ingredients above, because that’s really what cooking is about: The freedom to do whatever the f**k you want and make it taste good! 💙
