In honor of the great Charlie Watts, we dub this creation Can’t You Hear Me Knocking! An homage to a timeless groove and the approaching Fall we are greatly anticipating. Complete with Benchmark Bourbon, Yellow Chartreuse, Sour Orange (yes, we love sour orange), Disaronno, and D’Anjou pear bitters. A little grated nutmeg sets it off like that perfectly timed snap of a snare hit. 🍊

The simple and ritualistic construction of Suntory Toki and house Earl Grey tonic is truly a thing to behold. Cut through this humidity with happy hour til 6 at the bar.

Hey Friends!

So we’ve got some good news and some bad news. The good news is our staff has all received the second dose of the vaccine as of yesterday! The bad news is our staff has all received the second dose of the vaccine as of yesterday and as a result, many of us are experiencing some pretty gnarly side effects.

The fates are not on our side as of late. Due to the weather advisory and icy conditions, we will not be able to open for dinner service this evening. We are hoping conditions are better tomorrow. Happy almost Valentine’s Day! We are booked to the gills (although check same-day for last minute cancellations). We are offering our full menu and this lovely 3-course menu for both dine-in and take-out Friday through Sunday. Because we are running with such a small staff, we would prefer takeout orders be placed the day before. HOWEVER, if you are looking for same-day orders, we can accommodate while supplies last if orders are placed between noon and 4pm. Just let us know when you would like to pick up and we will do our best to accommodate. ❤️

We did takeout tonight to celebrate our anniversary and the food was fantastic! The lamb lollipops and collard greens had so much flavor and the presentation was beautiful despite it being to-go. We have missed this place so much and can’t wait to come back. Thank you for never disappointing!

I had a full stomach when I made small talk with the Stable's chefs about charcuterie. I raved about another local joint that made a fine sampler. No sooner did the words escape my mouth and one of the staff looked at me with a smidge of pity. He said, Our charcuterie is life changing." Disregarding my stomach, already engorged with a delightful duck breast and my favorite tuna tartar, I had to see for myself. These types of samplers, in my opinion, are about being compliment to a good wine and coupling sweet and savory combinations that enliven the palette. Visual showmanship should be as much emphasized. It was worthy of the chef's prideful arrogance. It was spread about the board with a haphazard beauty not unlike a work by Po***ck himself. Had I not tasted a single bite, the display was worthy of every praise. The deep rouge of the aged meat, the dew coated blueberries, the glistening creamy goat cheese, the coarse grain mustard! I can only imagine that hours were spent concocting the array of the perfect collection of everything. Every morsel paired perfectly with it's neighbor. Each delicious solitary element was made better with one of the platter's counterparts. Damn...just damn.
After dining with friends here last night I arrived home and fell into a deep slumber, dreaming that I was a spectator at Kitchen Stadium, where The Stables’ folks took on Chef Bobby Flay in an Iron Chef showdown. The secret ingredient was canned spam, which left Bobby dumbfounded. The Iron Chef, at a loss for creativity, sat in a paralytic stupor, while our Fan dwelling Amigos concocted a bewitching treat that had visual appeal rivaling the Sistine Chapel. The judges grinned with delight with our Muchachos (and Muchachas), while they scowled with disappointment at Bobby, who was still whimpering in the corner. The Stables’ staff were all good sports when the winner was announced and they all made their way over to the defeated Mr. Flay, consoling him for his shameful loss. As the victors swaggered off stage, single file, none even noticed Flay, still in his fetal position, except for the trailing waitress, who paused for a moment, dropped him a tissue and whispered “Beyyyyooooooootch.”
I prefer eateries that grant full view of the food preparation. As I was perched at the bar, my eyes scrambled to keep pace with the two chefs as they conducted tasks too numerous to list. As I am accustomed, I hammered the two busy young men with inquiries regarding their craft. Every entree is cooked to perfection and the scorching grill and oven were ablaze, bellowing savory aromas to lure those with a weakness for good cuisine. The waitress spotted me and she saw my wide eyes fixed to every passing plate. She approached with a devilish grin when she spotted me-- the weakest target among the flock. I had a few entrees as the food pushers took full advantage of my weakness. All was truly grand but the salmon tartar bent my senses indescribably. The temperature of the salmon was arctic by contrast, even to the bed of cool arugula. The fish was cylindrically formed and hansomely presented. I decoded most of the savory concoction that adorned the fish and the chef confirmed my suspicions. The staff continued to torment me as they diverted every passing plate beneath my nostrils. The staff are a shameless and depraved bunch preying on innocent Fan District visitors. Well done kids.

Popped in after theater for collard greens and strawberry panna cotta. Wonderful comfort food to round out the evening. Also had the pleasure of meeting and chatting briefly with chef Evan Campbell, my fellow William and Mary alum (who graduated decades after I did LOL). Can't wait to return for a full meal. :-)
