Meatless Monday…Gemelli organic Italian pasta, fried eggplant, (diced eggplant then place in colander and sprinkle with salt to release moisture from eggplant, let sit for about an hour then squeeze as much moisture out of eggplant before frying), sautéed red and yellow bell peppers and minced garlic. Add salt etc to taste after combining with pasta.
