We’re table side with chef extraordinaire Mike Ledesma talking greens! From Baltimore to Oahu to Richmond, Mike’s culinary travels and Filipino heritage inspire his kitchen creations every day at some of the finest restaurants around (Perch RVA, InstaBowl RVA, and The COOP rva, just to name a few). The Greenswell Growers crew recently had an opportunity to share our locally grown, fresh greens with Mike as he cranked out dish after dish topped with our Essential Green Leaf, Vibrant Greens Blend, and Hearty Kale Blend!
In addition to being one of our favorite chefs, Mike also gives back to the community around every corner as he regularly uses his culinary talents to support nonprofits and causes that push our region forward. Here’s to many more opportunities to collaborate with Mike and others passionate about community as we work together to use the power of food to change lives!

Looking for a last minute recipe for ? Chill out with this CBD Infused Butternut Squash Soup, courtesy of Chef Mike Ledesma of Perch RVA, InstaBowl RVA, and The Coop!
Chef Mike’s Butternut Squash Soup
Ingredients
1 Large Butternut Squash (1.5 lb)
1 Onion
2 Cloves Garlic
2 Leeks
1 Large Carrot
6 cups Vegetable Stock
2 tbsp Butter
Aleppo pepper
Salt and Pepper to taste
Secret Ingredients
Aleppo Pepper (Optional, but this gives the soup a unique flavor)
Agave to finish (to taste)
Instructions
Melt butter in saucepan. Saute onion, garlic, leeks and carrot until soft. Add butternut squash and vegetable stock. Bring to boil. Turn to low and simmer until squash is soft. Puree with immersion or upright blender, or food processor. Drizzle with pesto (recipe below), garnish with sunflower seeds and Togarashi.
Pesto
5 oz Arugula
½ cup Parmesan cheese
¼ cup Macadamia Nuts
1 tbsp Garlic
Approx. 120 mg CBD (or use CBD infused olive oil)
A Handful of H**p Leaves
Salt and pepper to taste
½ cup Olive Oil, or more to desired consistency
Garnish
Sunflower seeds
Togarashi sprinkle (Japanese mixed chili pepper)
