Chef Charlie Palmer, together with Ed Kellogg, General Manager of the Mirbeau Inn & Spa Rhinebeck, announce the conclusion of The Charlie Palmer Collective's involvement with the Willow restaurant at the Mirbeau Inn & Spa in Rhinebeck, NY.
“I have enjoyed consulting over the initial opening of the Willow Restaurant and exploring and creating what I think is a real representation of Hudson Valley cuisine and all the region has to offer,” says Palmer. “I wish the Mirbeau team the very best
in their next chapter with the hotel’s culinary program.”

Chef Palmer has several new projects, including the launch of his new hotel brand, Appellation Hotels – with three much-anticipated initial property openings in the pipeline. With Appellation hotels set to open over the coming years in Healdsburg, Sun Valley and Pacific Grove, Palmer looks forward to further immersing himself into each destination’s unique culinary landscapes – fostering new and long-term relationships with hyperlocal food communities and shining a light on Appellation's extraordinary destinations.
