The Highland Hills location became legendary as the spot for the best fried catfish in Dallas. Jack’s daughter Armentha “Peaches” Carroll was handed the business in 1981 at an early age, straight out of high school. She managed the business by herself until 1988 when she was joined by her husband, Johnny “Blue” Johnson. They operated the business together until 1994 when she decided to open anothe
r one naming it Peaches Louisiana Fried Catfish and Chicken located in Duncanville. She managed it with her father and mother, Gayla, until 2004 when her father became ill. He made the decision to pass the business on to his nephew, Andre “Big Dre” Baker. That location is now named Louisiana Fried Catfish and Chicken.
