We use fresh Maine lobster meat and don’t pre-mix it ahead of time. Our classic lobster roll is served on a buttered, grilled bun with light mayo. You can also order it with warm butter, lemon pepper, or sweet relish.

🦞 A question we get often: Why does lobster taste different at different times of the season?

First, our lobster rolls are always made with fresh Maine lobster—we never use frozen meat.

Lobster naturally changes throughout the season. In the spring, colder ocean temperatures mean most lobsters are hard-shell. Hard-shell lobsters have firmer meat and are packed with meat.

As the ocean warms during the summer, more soft-shell lobsters appear. Many people find soft-shell lobster to be a little sweeter and more tender.

Neither is better—they’re just different. Comparing a lobster roll in May to one in August is a bit like comparing different varieties of the same fresh product. Taste, texture, and even moisture can vary throughout the season.

No matter the time of year, we’re proud to serve fresh Maine lobster in every roll. 🦞
