Apricot BBQ Bacon Pineapple Bites
These sweet and smoky bites are the perfect appetizer, and our Inspector's Choice Apricot BBQ Sauce is the star of the show. Brushing it on at the end keeps the sauce glossy and prevents the natural fruit sugars from burning.
Ingredients
1 fresh pineapple, cut into 1-inch chunks (or one 20 oz can pineapple chunks, drained well)
1 lb bacon, cut in half
½ cup or so of Inspector's Choice Apricot BBQ Sauce

Instructions
Preheat your oven to 400°F.
Wrap each pineapple chunk with a half slice of bacon and secure it with a toothpick.
Arrange on a wire rack set over a foil-lined baking sheet. Using a rack allows the bacon to crisp evenly.
Bake for 20–25 minutes, turning halfway through, until the bacon is nearly crisp.
Brush generously with Inspector's Choice Apricot BBQ Sauce.
Return to the oven for 5–7 minutes, just long enough for the sauce to caramelize and become sticky.
Serve warm and watch them disappear!
Pro Tips
Pat canned pineapple dry before wrapping to help the bacon crisp.
Thick-cut bacon may need an additional 5–10 minutes.
For extra caramelization, broil for the last 1–2 minutes—just keep a close eye on them.
