Some states think a hot dog is a boiled tube on a soft bun. Jersey knows better. 🌭 Up in Fort Lee, the move was always the deep fried dog, dropped in hot oil until the outside went crispy and the whole thing snapped when you bit down.

Callahan's was the name people drove out of their way for, a little roadside stand where the line ran out the door on a summer night and nobody minded the wait. You got it loaded, you ate it standing up in the parking lot, and you already knew you were coming back the next week.

That is the thing about a Jersey hot dog joint. It is never really about the hot dog. It is about the specific place, the specific window, and the specific person who has been working the fryer for thirty years and calls you hon. ❤️
