On today’s episode, we talk with owner Sean Degnan and chef Drew Smith of Kō•än cary and soca raleigh (and special guest Jenn Rice!) about their new livable wage model in which every single one of their employees makes at least $15 an hour and gets paid sick leave, as well as where the $2.13 minimum wage for servers came from and how the standard tipping rate has changed over time. We also talk about kō•än’s inception and Drew’s Vietnamese-inspired menu based largely on his travels to the country and the food he enjoyed there. (We hear the banh mi is incredible.)
