An Important Update from SushiYaki
After a lot of thought, I've decided to transition SushiYaki from our permanent location here in Quincy and begin the next chapter of the business at a food truck park in the Tri-Cities.
This was not an easy decision. Over the past three summers, I've worked hard to build SushiYaki here in my hometown, and the support I've received from this community has meant more to me than you'll ever know.
Every person who tried my food for the first time, came back week after week, told a friend about SushiYaki, shared one of my posts, or waited patiently when I was busy. You’ve helped make my dream possible.
I believe this is the right step for SushiYaki as my new location will be at a year-round food truck park. It features indoor dining, restrooms, full utility hookups, additional storage, and a community space for events. Being in the Tri-Cities will also allow me to restock ingredients locally instead of making multiple trips each week to Wenatchee. That means I can keep more inventory on hand, spend less time on the road, and serve more customers without selling out as early.
One of my goals has always been to help bring something like this to Quincy. I would have loved to help create a dedicated food truck park here, whether near the high school, at the old car wash, or somewhere else where multiple food trucks could come together.
Unfortunately, I wasn't able to find the right partnership to make that vision happen at this time.
When I started SushiYaki, food trucks were banned in Quincy. Sushi wasn't available in Quincy or Ephrata, and a lot of people questioned whether a business like this could be successful here. I wanted to prove that with hard work, a different idea, and the support of this community, something new could succeed here. While it's time for SushiYaki's next chapter, I truly hope Quincy continues becoming a place where new ideas and local businesses can thrive.
Quincy will always be home, and I’ll be grateful to this community for giving SushiYaki its start. While it’s time for this next chapter, I hope this isn’t goodbye forever.
