Pecan Plaza, new Rosatis located at the corner of Riggs and Ellsworth in Queen Creek. Day 4 update with my "top 5".

1 - Turnout these first 4 days has exceeded my expectations. Thank you Queen Creek.

2- We are taking it slow to make sure we have our processes are right with our new staff. Have not turned on 3rd parties and we only started delivering Saturday night. We will be careful as we ad these and hopefully get approved for our liquor license soon.

3 - I am disappointed in our new oven / hood combo. I was led to believe that this type of oven is much more efficient than our other stores 50 year old school Chicago ovens. I had an HVAC guy out Saturday and we have a plan. I also am sorry that it got hot in our store. A gentlemen gave a us a 1 star review for Friday night and said he will never be back because of that. I promise I will get it fixed.

4 - Interesting how each location is different. For example, QC orders a great deal more, as a percent of total, double dough and deep dish pizzas. Nothing bad, just interesting to see and it is very noticeable.

5 - Amazing how many people have come in and shared their Rosatis story with me. They went to high school with a Rosati. They worked at Rosatis in high school. Rosatis was dad's favorite pizza. Love the stories and please continue to share.

On to day 5. Thank you

Update, end of day Saturday August 29 2026.

New Rosati's located at 25166 S. Ellsworth Rd in Queen Creek.

New oven is working great. Today we had Andy the oven guy from Rosati's here to help me get it going.

Here are the first two pizzas to enter their respective conveyor chambers (top for thin crust and bottom for deep dish and double dough).

Took us some time but we got it done. Each chamber is set specifically with 4 factors. Time, temp on top of pizza, temp on bottom of pizza, and the convection setting.

We are sitting at around a 7 minute and 10 second cook time for thin crust. Awesome.

Thank you team Rosatis for helping us out.

Still thinking of a Wednesday 11 AM open (September 2, 2026).

Thank you all for your support.

Queen Creek Rosatis is close.

Here since 6 AM (Saturday, August 22) and the number of people "stopping by" to see if we are open is really overwhelming. Thank you to everyone for supporting us as we get this place open.

This weekend we will have all our Audio / Video installed with our Point of Sale terminals mid to late next week.

We failed our air balance so awaiting on a few "parts" to arrive by Wednesday so we can get over that hurdle.

One step forward, two steps backs....

See you soon.

Queen Creek Rosati's is in near.

25166 S Ellsworth Rd B101, Queen Creek, AZ 85142

Double Decker Hot Rocks has been installed and ready to roll.

A few inspections to knock out over next week or so but we are pressing.

Fun fact. This will be the first open kitchen concept in Arizona if not the Rosati's concept nationwide. 100% front of house with the crown jewel the double decker Hot Rocks oven that cooks on a conveyor of stone.

More to come and thanks for your patience......
