Produce Box: what is bitter melon 🥒

Despite its name, it really is more like a cucumber or a squash. It is naturally bitter but folks eat it because it is fantastic for getting blood sugar in check and curbing inflammation.

So here’s what you’re going to do with it:
1. Slice it in half and scoop out the white part (the pith).
2. Coat it with salt and let it marinade for a bit. Then rinse.
3. Slice and saute

Craving some blueberry-jalapeño salsa? Be sure to shop local for the ingredients

This week at Seymour Foods:

Blueberries from in Charlotte, VT (Organic)
Jalapeños from in Stow, MA (IPM)
Red Bell Pepper from in Sharon, MA (IPM)
Cilantro from in Burlington, VT (Organic)
Lemons (Organic)

Recipe:

Coarsely chop 2 cups of bluebs and mix with 1 cup bluebs, lemon juice from 1 lemon, some chopped cilantro (measure with your heart), 1 minced jalapeño (your choice whether to remove the seeds or live life on the edge), and 1 diced red bell pepper. Add a pinch of salt and enjoy chilled with your favorite

Produce box theme: “We-have-no-idea-what-to-do-so-let’s-just-get-a-ton-of-fun-produce.” It’s a mouthful for sure!

Chloe was unavailable for box ideas this week and Lisa was able to get her hands on some fun/interesting veggies! [She also got her hands on 145lbs of tomatoes but you’ve heard about that all week].
