Kristine's is a French bistro located in downtown Princeton, NJ. The menu features French classics alongside vegetarian and vegan options. We have a beautiful front patio which will accommodate outside dining. We also offer take-out meals for pick-up Mon- Thurs.

From Paris to the Bayou: The French Roots of Our Chicken & Andouille Gumbo 🍲✨

​Have you ever wondered why a classic Louisiana Gumbo feels right at home on our French bistro menu at Kristine’s?

​While Gumbo is famously the pride of the American South, its DNA is deeply connected to old-world French cooking. When French settlers arrived in Louisiana in the 1700s, they brought their foundational culinary techniques with them, most importantly, the art of the roux.

​Faced with a new landscape, those French cooks adapted. They swapped traditional European ingredients for what grew locally, blending their techniques with West African traditions and Native American Choctaw influences.
