❤️🤍💙📸: we fresh-baked off all butter croissants, covered them in chocolate and then swirled them through chocolate ice cream!!!

❤️🤍💙 we’ll have mini croissant ice cream sandwiches until we run out of croissants!

📸:🇺🇸🪶Thomas Jefferson’s frenchy-style vanilla bean!🪶🇺🇸

🇺🇸Even though the signers wanted to be “absolved from all Allegiance to the British Crown”, I think they must have known better than to cut all ties with Europe and its neighbors. Especially France. You should definitely go down a few rabbit holes about how good ol’ TJ got this recipe, but ultimately it’s an oldie but goodie.....a true custardy crème anglaise, with descriptions of ingredients so charming (“2 bottles of good cream”) that you are left imagining those thick glass bottles, full of separated dairy & thinking abut what lengths they must have went through to get not only a rare vanilla bean, but sugar and ice!

🇺🇸We first made this way back in 2006 maybe? Morven Museum and Gardens was having a special event, gave us the recipe and we adjusted it to work with our extremely modern equipment. This year it’s back at Morven for their 4th of July festivities (!) and was commissioned for a few other events as a fun little part of our nation’s celebrations. It will even be at the sold “Summer Reading Soirée” event at the Princeton public library next week!

✨But starting today, you can try it here for as long as we can make it, for scooped and in pints!

✨Accordingly to the Museum of Natural History, the weather here in the greater Philadelphia area was gorgeous on July 4th, 1776. A morning low of 68 degrees, and an afternoon high of 76. They know this because apparently Thomas Jefferson meticulously recorded the meteorological conditions in his personal weather journal (!) & I’m glad he did. Beautiful blue skies for burgeoning nation! To Liberty!

✨BEAT THE HEAT! Local and organic basil with fresh squeezed organic lemon makes a refreshingly wonderful sorbet as is, or even MORE refreshing with sparkling water poured on top as a spoon soda! ohhhhhhhhhhh, so thirst-quenching!!!

and no matter the weather, the Class of 2026 at Princeton is graduating & the senior class officers collaborated with the class to concoct a special “CLASS of 2026 GRADUATION FLAVOR’ (that’s what it’s called!)
✨Their final flavor has a little bit of everything and a whole lot of heart!
it’s a BROWN BUTTER VANILLA BEAN ICE CREAM swirled with spoon-made sea salt caramel, organic Newman O’s cookies & naturally colored orange sprinkles! So festive!

🍋✨💜LEMON LILAC!!!
SUPER DUPER EPHEMERAL MICRO BATCH!
oo la la!! we were able to grab this year’s fragrant and beautiful lilac flowers (from matt’s bush!) just after it was too hot (then too cold), but after it was really hot enough to remind the flowers to bloom! And, if you want to get technical, also just before all this rain. WHEW! Are we all the luckiest people or what?
🍋just like years past with fresh squeezed lemon and a bit of butterfly pea flowers as well for color - this TOTALLY RARE ice cream will be in the case until it’s not! No pints available, but if you’re nearby and there’s still some left, consider yourself invited to taste what drinking a nice cool lemonade (while your sniffing around a lilac bush) tastes like! ✨

🐅🐯WELCOME BACK TIGERS FOR REUNIONS 2026 & joy to anyone else who happens upon Princeton and gets to see some of the best class outfits around!! It’s the bee’s knees to see customers old and new enjoying ice cream and our wonderful university town...THANK YOU FOR VISITING! 🐅🐯

✨I don’t really want to even tell you all the flavors we’ll be having in all weekend because WHO KNOWS how long they will last? We’ll have so many old favorites and lots of super RARE and special ones all weekend long.
🚨PRO TIP:THIS IS ONE OF THOSE MOMENTS TO SUPER-DUPER EMBRACE THE SYNCHRONICITY OF LIFE!! (what flavors will be there and which two will choose YOU!?? WHAT DOES IT ALL MEAN?)

✨but because I want to tell you a little, here’s a sneak peek of just SOME of what’s on deck this weekend: we’ve been hand-pressing so much espresso (thank you, ...yum, tiramisu!), hulling pounds and pounds and pounds of NJ strawberries (love you ), chopping also pounds and pounds and pounds of organic rhubarb (!), hand-plucking delicate little flowers (ohhh! lemon lilac!), and specialty whirling up locally milled matcha and houjicha (thank you, .co !) just never a dull moment for your friends over at the spoon.✨

✨Anyway, all the glee to welcome back all of our dear university loves and here’s hoping for a safe and gorgeously balanced weekend right through graduations next week!🎓🎓🐅🐯🎓

✨To celebrate their 45th anniversary, Isles gave us some of their OWN honey to make two versions of a special ice cream! Isles honey with local and organic lavender AND that same ice cream with fair trade chocolate bits swirled in (you have to love chocolate bits swirled in....it’s just DELICIOUS).
