We’ve been working on our NEW Prosciutto Brasato pie at our Portland pizzeria for the last six months, and we’re so excited to finally share it with you!⁠

This pizza is truly sustainable, using ingredients from our kitchen that would have gone to waste. ⁠

It’s topped with tomato jam, tomato oil, parmesan cream, prosciutto braised in coca cola and red wine, salsa verde made from farm veggie stems, with more parm and grana padano sprinkled on top 🍅⁠

Konstantinos is a delicious wine available at the pizzerias, and also an important piece of our owner, Peter’s, family history. Named after his family’s original Greek surname before they ventured to America, this collaboration between Peter and winemaker Bill Hansen is made with fruit from Bill’s estate vineyard at Carlton Cellars. ⁠

This particular bottling is called Helen’s Cuvee, which is extra special as it’s named after Peter’s yaya, Helen. ⁠
