I couldn’t think of anything red white and blue. I did however think of watermelon gazpacho . I love it so much. It’s cool and refreshing on a hot day. I also still have a few quarts of the old wives tale Hungarian mushroom and as always, my tomato, I hope everyone enjoys the holiday weekend. It’s freakishly hot today. It’s going to be hot tomorrow. I have made salmorajo. It is a Spanish style chilled tomato soup. It is super refreshing on a hot say. It is probably my favorite chilled Soup of all time. However, watermelon gazpacho runs a close second. So I have also made watermelon gazpacho. It is slightly sweet with a hint of spice and creamy and chunky at the same time. Also super refreshing on a hot day. I will have both of those for the rest of today and also tomorrow or at least until I run out. I hope everyone’s surviving this heat. I kind of miss my childhood when we never got above 75. The picture is not mine. I stole it from Google. Mine does, however look quite a bit like this.

I walked past the spice shop this morning. That is usually a bad idea lol. So today’s soups are Tomato vegan and gluten free. Chilled Spanish white bean vegan and gluten free. Some days I am way too pleased with myself. I had an idea for a chilled white bean soup. And I of course chatted with my niece, Jackson, and between the two of us, we came up with blended cannellini beans with jalapeño and cilantro a little olive oil and a ton of lime. It may be the best chilled Soup I’ve ever made. I will also have Tomato. Both soups are vegan and gluten free. I should get a restock of old wives tales Hungarian mushroom today. I will let you know.
