juicy Brisket. You may not see the classic smoke ring so prominent on this brisket because it was a choice cut. so due to its leanness I wrapped early with tin foil instead of butcher paper to retain max renderings.

This reheat Family brisket came out super tender and flavorful. I don’t know what was better the brisket or watching everyone’s face get happy when they ate it. Probably the latter. This brisket was smoked for twelve hours on an offset then was hot held at 145 for another 18 hours. Then cooled and frozen, wrapped in extra beef tallow and tin foil. Thawed it out and reheated it wrapped in foil at 200 degrees for 7 hours. Came out great but had a slightly different texture. If you know you know. I whipped up a sauce and Now I have the burnt ends going on an electric smoker for a few hours for some family brisket candy !!! Gotta love it.
