Tonight's experiment turned out to be a winner.
I decided to swap out traditional pasta for organic black bean pasta and pair it with a creamy vodka sauce. Then I browned up some lean ground elk, added fresh sweet onion and red bell pepper, and finished it off with a generous handful of freshly grated Parmesan.
I'll admit, I wasn't sure how black bean pasta would hold up, but it had a great texture, packed in extra protein and fiber, and paired surprisingly well with the rich sauce. This is definitely going into the rotation.
Sometimes eating for your goals doesn't mean giving up great food. It just means getting a little creative in the kitchen.
