Earlier, in Sheboygan it’s 68 degrees, sunny and dew point is 63 degrees

It’s perfect weather to fry cheese.

Fresh battered Cheese has to be totally sealed with batter (cold batter if possible)and constantly stirred up in the fryer (and that’s the Puller’s Job or the Cook) to prevent the cheese from leaking. The product cooks more evenly fast

High humidity makes it harder for the batter to seal the cheese. The more it leaks the more we loose the product and the more it destroy the oil.
